4 oz diced cooked chicken
1 tbsp low fat Mayo
2 tbsp mustard (spicy mustard is good)
1 finely chopped medium apple
2 chopped dill pickles
2 chopped baby carrots
Mix it all together and serve on a bed of chilled lettuce or spinach greens.
P.S. I personally think this is better after a night in the fridge.
